Stefa Hart' s interiors are stylish and luxurious; downstairs the glorious blue and white drawing room is dominated by Jo Porter's extravagant seasonal flower arrangements and the marble chimney piece is flanked by welcoming sofas and armchairs. Aaron Patterson, Head Chef since 1992 and holder of a Michelin Star, has his own style, combining a conservative respect for traditional ingredient combinations with an unusual zeal for sniffing out and working wonders with special and often local ingredients. Flavours are robust but never clumsy, and this is one of Britain's few top restaurants which avoids slavishly following culinary fashion. Wine is equally important at Hambleton: the list is certainly long, but Tim Hart is much more interested in discovering new and delicious middlepriced wines than in cataloguing big names.
